The Salad Bowl....
A yummy pasta salad I came across on FoodNetwork. Enjoy!!
Ingredients
- 4 ounces gemelli pasta
- 1 small garlic clove
- Kosher salt and freshly ground black pepper
- 1/3 cup reduced-fat sour cream
- 1/3 cup buttermilk
- 2 teaspoons cider vinegar
- 1 scallion, minced
- 2 small ears fresh corn
- 8 ounces grape tomatoes, preferably mixed heirloom, halved
- 1/4 small red onion, thinly sliced lengthwise
- 4 cups baby arugula
Directions
Cook the pasta in boiling salted water according to package directions; drain and run under cold water to cool.
Meanwhile, finely chop the garlic clove on a cutting board; sprinkle with salt. Using the blade of a chef's knife, press down onto garlic, smashing it to make a paste. Add the garlic paste to a large bowl with the sour cream, buttermilk, cider vinegar and scallion; season with salt and pepper. Whisk the dressing until smooth and reserve.
Cut the kernels from the corn (breaking sheets of kernels into about 2-inch pieces, if desired). Add the corn, tomatoes, onion and arugula to bowl with dressing; gently toss to coat.

Inspiration Through Movement...
Dance can move you in a completely different way than anything else in life. This specific dance from So You Think You Can Dance tells a story of addiction. I have never been so moved emotionally by a dance than I was with this. The words of the song with the movement of the dancers is so inspiring. Hope you enjoy it as much as I do!!
Fall is Here...
Summer has officially come to an end. Time to put the bikini and flip flops away and bring out the high boots and warm scarves. Here are a few of my favorite fall items for the leaf falling season....

31 BITS: USING FASHION AND DESIGN TO EMPOWER WOMEN TO RISE ABOVE POVERTY.
I recently went to a little boutique by my house called Laurenly in the Plaza of Orange. I love the unique items they always have there. I came across this jewelry that totally caught my eye. There were all different types of necklaces and a variety of bracelets. I decided to buy 2 of the bracelets because they were completely my style. Once I got home I decided to research them even more. I came across the website: http://31bits.com/ and started exploring. Here is some of the info I found...
Uganda
Nearly two million people in Northern Uganda have been displaced from their homes and villages as a result of the ongoing, catastrophic war traveling throughout East Africa. The Lord’s Resistance Army (LRA), led by Joseph Kony, began its malicious movement in 1986 through a horrific agenda of torturing individuals, setting villages on fire, and abducting thousands of children. Within two decades, the LRA had recruited nearly 66,000 youth to their army, forcing children to be soldiers, “wives”, and slaves.
In 1996, the Government of Uganda forced approximately 1.8 million people to relocate to Internally Displaced People’s (IDP) camps in an effort to provide refuge and protection, however, a decade later, the situation in IDP camps worsened as they became filled with disease, poverty, malnourishment, and few opportunities to leave.
Throughout the last few years, many people have been permitted to leave IDP camps and return to their villages, however, individuals and communities at large have been left with little hope of returning to their normal way of life or attaining social equity. The limited access to education, employment, and sustainability has forced many people to relocate to the District of Gulu, where they are seeking aid and opportunity.
There are some who have achieved sustainability for themselves and their families, while thousands of others remain with few chances for employment, livelihood, and provision. Gulu is filled with astounding high spirits and energy; however, the lack of opportunity has diminished many people’s hope for prosperity. As their deprivation of sustenance, opportunity, and optimism continues, there is a growing need for effective actions to take place that will counter poverty, offer hope, and establish sustainability.

Trevor Hall
A few years ago I went to a Colbie Caillat show in Hollywood. Trevor Hall opened the show and I fell in love. His soft and settle tunes totally got me. He's a cross between rock and reggae, a sort of Ben Harper meets Bob Marley kind of feel. I just went to his show this past weekend at the Roxy in Hollywood, this being the second time I have seen him live. AMAZING. He put on one of the best shows I have been to in a really long time. Such a great set list and played songs from his old albums as well as his brand new one that just came out. I highly recommend you download his music and enjoy it as much as I do and have for the past couple of years. Happy Listening!!!
Best Spot Around....
I discovered this little vegetarian spot a few years ago. Talk about amazing. The best salads around, fresh fresh fresh food, and super friendly staff. They have everything from breakfast burritos to salads, wraps, and amazing smoothies and fresh juices. Being a vegetarian myself, it is really nice to have a place where I can go and satisfy any type of craving I might be having that day. A MUST for everyone! Enjoy!!

Fizz No More....
I am always looking for ways to get away from the urge and temptation of sodas and sugary drinks. I came across this recipe when I was on one of my favorite blogs: Nutrition to Kitchen. I'm not gonna lie, I LOVE soda. Such a weakness of mine. But I am always reading how horrible it is for you and I just keep trying to stay away from it. There are 140 calories in one can of soda, all coming from the sugar in it. This equals 9 teaspoons of sugar. 9!!!! Insanity. So, here's a recipe for a flavored water that can at least spice up that average glass of yours...
Cucumber-Ginger Water
makes a pitcher
2 cups boiling water
1 2-inch piece of fresh ginger, peeled and sliced in half lengthwise
1 whole cucumber, sliced thinly
Cold water
1. Place the ginger in the boiling water and steep over low heat for about 10 minutes. Pour the ginger and water into a large pitcher, and fill the rest with cold water. Place in the refrigerator until cool, then add in the cucumber slices. Chill until cold before serving.
